- 1/2 cup water
For the Frosting:
- 1/4 cup unsweetened plain Greek yogurt
- 1 tablespoon peanut butter
Instructions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners or lightly grease with cooking spray. - Mix the Dry Ingredients:
In a large bowl, whisk together the whole wheat flour and baking powder. - Combine Wet Ingredients:
In another bowl, mix the applesauce, peanut butter, grated carrots, Greek yogurt, honey, and water until well combined. - Make the Batter:
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be thick but scoopable. - Fill the Muffin Tin:
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. - Bake:
Bake for 20-25 minutes or until a toothpick inserted into the center of a pup-cake comes out clean. - Cool:
Allow the pup-cakes to cool completely on a wire rack before frosting. - Prepare the Frosting:
In a small bowl, mix the Greek yogurt and peanut butter until smooth. - Frost and Serve:
Spread a small amount of frosting on top of each cooled pup-cake. You can also top them with a dog-friendly treat like a small biscuit or a slice of banana for extra flair. - Store:
Store any leftovers in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
